Sweet Potato Souffle

This is one of my family’s favorites, my grandmother made it every year at Christmas and Thanksgiving and as she got older other members of the family started to make it. If there’s no sweet potato souffle there would be a bit of a fuss. This one does not call for marshmallows although those can easily be used as a substitute for the topping. If you want it to be less sweet you can leave the topping off altogether, it is almost like a dessert with the topping!


3 cups cooked (roasted or boiled) & mashed sweet potatoes
1 cup sugar
½ c. milk
2 eggs
1/3 stick of butter
½ teaspoon vanilla
1/2 teaspoon salt

Mix and put in a greased casserole dish.

1 c. brown sugar
1/3 c. flour
1/3 stick butter, melted
1 c. chopped pecans

Mix topping ingredients together and sprinkle over sweet potatoes in casserole dish. BAKE 30 min. at 350 degrees
